Today I decided to make a banana bread after school so now that I have made it I have decided to share this delicious recipe with you.
Ingredients
- 140g of softened unsalted butter (add extra for tin)
- 140g of self-raising flour
- 140g of caster sugar (100g for less sugary recipe)
- 2 very ripe bananas
- 2 large eggs
- 2 tsp of baking powder
For icing / decoration (optional)
- 50g of icing sugar
- A handful of banana chips
Method
Step 1 – Heat oven to 180C° / 1600C° fan / gas 4. Butter your cake tin (you could use baking paper to line bottom)
Step 2 – Cream the softened butter with the sugar until light and fluffy. Then beat in the eggs along with part of the 140g of flour (about 60g)
Step 3 – Mash the bananas in a separate bowl then fold into mixture along with remaining flour & 2 tsps of baking powder
Step 4 – Carefully pour batter into cake tin and then place in oven.
Method of baking – Cook the cake for 40 – 50min (depending on size of tin) and check at 5 min intervals. At the point when you can remove a clean knife from it then you can remove it from oven. Then leave to cool for 10mins. Once cooled down remove from tin and enjoy!
Icing method – Start by mixing the icing sugar with water until it is runny but not sloppy. Drizzle over the cake and add the handful of banana chips on top.
