Hello and welcome back to my blog. Today it rained all day so I decided it was a good opportunity to bake a cake and then share it with you all.
Ingredients
- 6 eggs
- 1 orange (for juicing and zesting)
- 300g of flour
- 250g of sugar
- 1 cup of oil
- 2 teaspoons baking powder
Method
- Separate the egg yolks from egg whites
- Add sugar to the egg yolks and beat very hard until it becomes a creamy colour
- In a separate bowl whisk the egg whites until light and fluffy
- Zest the orange and then juice it until you have made just about a cup of juice
- Add the oil and orange juice + zests to the mixture of sugar and yolk
- Add the flour and mix until thick and creamy
- Carefully fold in the fluffy egg whites until you have created a bowl of batter
- Transfer the batter into a baking tray and bake for mins
- Take ourt from the oven, cool and … ENJOY!
