Hello again, today I baked a lemon drizzle cake so I have decided to put it on my blog.
Ingredients:
- Two lemons (for zesting and juicing)
- 200g of caster sugar
- 225g of (softened) unsalted butter
- 225g of self raising flour
- 4 eggs
- A handful of poppy seeds (optional)
Method:
- Heat your oven to 180°C/ 160° gas/ fan 4
- Soften the butter in the microwave and mix with sugar until creamy
- Add in the eggs one by one to the mixture
- Zest and juice the lemon
- Add lemon zest and flour with about 1/4 of the lemon juice
- Grease a baking tin with some butter
- You can now also add the poppy seeds (if you want to)
- Put into the pre-heated oven and bake for 40 – 50 mins
For the Drizzle:
- Mix together the rest of the lemon juice and the sugar until syrupy
