Ingredients:
- 4 or 5 red peppers
- 1 tin of chopped tomato (or passata)
- 3 cloves of garlic

Method:
First, put your oven to preheat (grill mode) at 250°C.
Then, lay the peppers on a tray and put them in the oven for 30 minutes (turn them around half way). The peppers should look like the picture underneath. Take them out of the oven.

Leave them to cool down in a bowl covered with tin foil.
When it has cooled down, peel them off and remove all the seeds.
Cut them in stripes lengthways.
Put some olive oil in a hot pan and add the pepper stripes.
Stir for 2 mins, then add the chopped tomatoes and peeled garlic cloves.

Let it simmered slowly for up to 1 hour, check and stir regularly.
It should look like the following picture when it’s ready!

Add some salt and pepper to your taste and enjoy as a side or on a slice of bread!
